2012 815 California Cabernet Sauvignon
The 2012 Joel Gott 815 Cabernet Sauvignon has aromatics of roasted blue fruit, sweet blackberry and cherry cola with hints of graham cracker and vanilla. The wine enters with dark, concentrated fruit on the palate, velvety tannins on the mid-palate, followed by a long, vibrant finish.
Throughout California, the 2012 vintage experienced low rainfall and moderate temperatures giving us fruit with ideal ripeness, deep color and soft tannins. Napa fruit is complex with great depth, Lake County fruit offers minerality and rich texture, and Sonoma fruit adds a touch of spice. Fruit from Lodi has deep colors and soft texture, and Paso Robles fruit adds good flavor maturity and development. Sourcing from these varied regions across California helped to create an elegant, balanced wine.
After harvest, fruit from each vineyard is hand-sorted at our winery and de-stemmed before being fermented in individual lots. The lots are aged for just over a year in oak, and tasted frequently for tannin flavor development. Finally, the lots are blended to balance the characteristics of each vineyard.
