GOTT Napa Valley Cabernet Sauvignon 2016
Tasting Notes
The GOTT 2016 Napa Valley Cabernet has aromas of black cherries, blueberries, plum and black licorice with notes of cedar spice and toasted oak. The wine opens with dark, roasted black and blue fruit flavors followed by soft, velvety tannins on the mid-palate, which are balanced by an elegant structure and a long finish.

Varietal
99% Cabernet Sauvignon
1% Merlot
Appellation
Napa Valley
Barrel
100% New French oak
Vineyard Notes
We selected our Cabernet Sauvignon fruit from hillside vines in southeast Napa where the cool, foggy mornings and evenings allow for longer hang time resulting in well-developed fruit flavors, and well-balanced tannins and acidity in
the wine. A small amount of Merlot is blended to help complement the varietal’s characteristics of Cabernet Sauvignon by softening the powerful tannins and adding texture to the wine.
Harvest Notes
Across California, the 2016 growing season started off with an early bud break followed by a warm spring, with moderate summer temperatures and cooler than usual nights in July and August. Optical sorting was done to ensure only the best berries go through to the fermentation process. The fruit was picked at its optimal ripeness delivering Cabernet Sauvignon fruit with rich, ripe flavor, tannins and structure.

Following harvest, the wine was aged for 22 months, in 100% new French oak.
